Grilled Vegetable Antipasto is a vibrant and flavorful Italian appetizer made from an assortment of grilled vegetables, marinated in olive oil, garlic, and herbs. This dish embodies the essence of Mediterranean cuisine, highlighting the natural sweetness and smoky flavors of seasonal vegetables. Served at room temperature, it is a versatile dish that can be enjoyed as a starter, a side dish, or part of a larger antipasti platter.

Ingredients

  • Eggplant: 1 medium, sliced into rounds

  • Zucchini: 2 medium, sliced into rounds

  • Red Bell Pepper: 1 large, cut into strips

  • Yellow Bell Pepper: 1 large, cut into strips

  • Cherry Tomatoes: 1 cup, halved

  • Red Onion: 1 large, sliced into rings

  • Extra Virgin Olive Oil: ¼ cup

  • Garlic: 3 cloves, minced

  • Fresh Basil: 2 tablespoons, finely chopped

  • Fresh Parsley: 2 tablespoons, finely chopped

  • Balsamic Vinegar: 1 tablespoon (optional, for a tangy finish)

  • Salt: 1 teaspoon, or to taste

  • Black Pepper: ½ teaspoon, freshly ground

Directions

  • Prepare the Vegetables:
Preheat the grill or grill pan over medium-high heat.
Brush the eggplant, zucchini, bell peppers, and red onion with olive oil, and season with salt and pepper.
  • Grill the Vegetables:
Place the vegetables on the grill and cook for about 3-4 minutes per side, or until they are tender and have nice grill marks.
Remove from the grill and let them cool slightly.
  • Marinate the Vegetables:
In a large bowl, combine the grilled vegetables with the cherry tomatoes.
Add the minced garlic, chopped basil, parsley, and a drizzle of balsamic vinegar if desired.
Toss gently to coat the vegetables in the marinade.
  • Let the Flavors Develop:
Allow the vegetables to marinate for at least 10 minutes before serving. This helps the flavors meld together.
  • Serving Suggestions:
Antipasti de légumes grillés is best served at room temperature as part of an antipasti platter, alongside cured meats, cheeses, olives, and crusty bread. It also works wonderfully as a side dish for grilled meats or fish, or as a topping for bruschetta.
