Directions
- Prepare the Vegetables:
Preheat the grill or grill pan over medium-high heat.
Brush the eggplant, zucchini, bell peppers, and red onion with olive oil, and season with salt and pepper. - Grill the Vegetables:
Place the vegetables on the grill and cook for about 3-4 minutes per side, or until they are tender and have nice grill marks.
Remove from the grill and let them cool slightly. - Marinate the Vegetables:
In a large bowl, combine the grilled vegetables with the cherry tomatoes.
Add the minced garlic, chopped basil, parsley, and a drizzle of balsamic vinegar if desired.
Toss gently to coat the vegetables in the marinade. - Let the Flavors Develop:
Allow the vegetables to marinate for at least 10 minutes before serving. This helps the flavors meld together. - Serving Suggestions:
Antipasti de légumes grillés is best served at room temperature as part of an antipasti platter, alongside cured meats, cheeses, olives, and crusty bread. It also works wonderfully as a side dish for grilled meats or fish, or as a topping for bruschetta.
