  • 2-3 tablespoons freshly squeezed lemon juice (about 1 large lemon)

  • 1-2 cloves garlic, minced

  • 2 tablespoons extra virgin olive oil, plus more for drizzling

  • 2-3 tablespoons cold water (adjust for consistency)

  • ¼ teaspoon ground cumin (optional, for a warm, earthy note)

  • Salt to taste

  • Paprika or sumac for garnish (optional)

  • Chopped fresh parsley for garnish (optional)

Directions

  • Blend the Chickpeas: In a food processor, combine the chickpeas, tahini, lemon juice, garlic, cumin (if using), and a pinch of salt. Blend until the mixture is smooth.
  • Adjust Texture: With the processor running, slowly add cold water, one tablespoon at a time, until the houmous reaches your desired consistency—smooth and creamy.
  • Incorporate Olive Oil: While still blending, drizzle in the olive oil until fully incorporated. Taste and adjust seasoning with more salt or lemon juice if needed.
  • Serve: Transfer the houmous to a serving bowl. Drizzle with a bit more olive oil and garnish with paprika or sumac and chopped parsley if desired.
