1 can (400g) of chickpeas, drained and rinsed (or 1½ cups cooked chickpeas)
¼ cup tahini
2-3 tablespoons freshly squeezed lemon juice (about 1 large lemon)
1-2 cloves garlic, minced
2 tablespoons extra virgin olive oil, plus more for drizzling
2-3 tablespoons cold water (adjust for consistency)
¼ teaspoon ground cumin (optional, for a warm, earthy note)
Salt to taste
Paprika or sumac for garnish (optional)
Chopped fresh parsley for garnish (optional)
Directions
- Blend the Chickpeas: In a food processor, combine the chickpeas, tahini, lemon juice, garlic, cumin (if using), and a pinch of salt. Blend until the mixture is smooth.
- Adjust Texture: With the processor running, slowly add cold water, one tablespoon at a time, until the houmous reaches your desired consistency—smooth and creamy.
- Incorporate Olive Oil: While still blending, drizzle in the olive oil until fully incorporated. Taste and adjust seasoning with more salt or lemon juice if needed.
- Serve: Transfer the houmous to a serving bowl. Drizzle with a bit more olive oil and garnish with paprika or sumac and chopped parsley if desired.
Notes
- Tahini: A paste made from ground sesame seeds, tahini is essential for houmous, providing a creamy texture and nutty flavor. It balances the acidity of the lemon and complements the earthiness of the chickpeas, making the dip rich and smooth.
